I am renting out a bedroom and the tenant told me May 8 that she's moving out May 17th. There is no lease so
it's a month to month residency. Would she have to pay for June?

Typically without a lease the tenant is month to month as you stated. That being said, she should have given you 30 days notice and have paid her rent for those 30 days.
You can go to landlord/tenant court in your county to sue her for the money she owes you. The tenants don't usually show up and you would get a judgement against her. Collecting on that judgement is not so easy. Get a forwarding address for her in case you decide to serve her. If you don't have a copy of NJ Landlord Tenant Handbook, you should get one so that you know your rights (minimal as they are) being a landlord. I can send you one, if you would like, just email me through Trulia or my website below. Tue May 13 2008, 06:58 Web Reference: http://www.dianeglander.com

Without a lease, I think it would be difficult for you to make her pay for June, perhaps she will give you half the month.

It seems that it might be difficult to enforce without any type of formalized agreement.
